Small potatoes boiled in their jackets with Mojo
“Papas arrugadas con Mojo”
|
Ingredients:
|
 |
- 1 kg of small potatoes
- 250 g of salt
- 3 or 4 glasses of water
1. Wash the potatoes thoroughly and scrub them. Do not peel them.
2. Place the potatoes and the salt in a pot together with lemon and cover the
ingredients with water. Once the potatoes are cooked, take out the water
and place the pot with the potatoes again on the stove, moving them until
they dry up (approximately 2 minutes).
3. Remove the pot from the stove and leave it some minutes wrapped in a cloth.
4. Finally serve the potatoes in a bowl and pour the mojo on the top.

Red hot Mojo
"Mojo Rojo o Picon"

Ingredients:

- 1 bulb of garlic
- 2 hot peppers
- 1 tea spoon of cumin grains (caraway seeds?)
- 1 tea spoon of paprika spice
- 4 table spoons of vinegar
- 15 table spoons of olive oil
- Sea salt (as desired)
1. Peel and chop up the garlic cloves. Grind them in a mortar along with the cumin
grains,the peppers without any seed, and the cooking salt until they bind in a
soft paste.
2. Add the paprika spice and slowly pour the oil and vinegar onto it until a thicker
mass emerges.
3. This paste can be liquidized to taste by using a small cup of water. The sauce
can be kept in good conditions during months in the fridge.
Recipe variation: For a milder sauce you can use sweet peppers instead of hot peppers.
