Lamb chops in tomato olive crust

Ingredients

Recipe for 6 persons

2 rack of lamb
Salt, pepper ground
8 tb of olive oil
2 ripe tomatoes
60 g of black olives
Thyme, basil
60 g of dried tomatoes
c.100 g toasted crumbs
garlic
20 g of butter
80 g of parmesan


Preparation

Remove all skins and tendons of the rack of the lamb carefully and cutting approx. 50 g heavy chops and grill shortly on the grill on both sides, putting on metal, topping a spoon of the tomato olive crust and gratinating in the stove at 170 degrees around 8 minutes.

For the tomato crust boiling the tomatoes, skinning, halving, stoning and cutting into cubes. Browning in 2 tb of olive oil, seasoning with salt and pepper and keeping in cool place. Hashing the olives, thyme and the basil leaves, cutting the tomatoes into little cubes and giving all together under the tomato cubes cooled down, at the end giving paremsan and so much white bread cubes until the mass is smooth and spreadable. Seasoning with salt, pepper and garlic tastily.

Putting the lamb chops on a vegetable bed and garnishing with a concentrated thyme juice and thyme branch.
